    Vegetarian and vegan recipes?

    I know there are a fair amount of vegetarian/vegan people here, and I was wondering if you all would post some of your favorite recipes here?  Complicated ones are fine- I love to cook!

    Here's one I made last nite:

    Ingredients

    3 cup rice milk

    1 cup short grain rice (arborio,
    1 sweet, etc)
    3 bananas, mashed (i assume
    1 they meant to say very ripe
    1 bananas)
     1/2 tsp nutmeg
    1/2 tsp cinnamon
    1/8 tsp ground cloves

    2 TBL honey or maple syrup


    Directions

    Preheat over to 350F. Mix all together well and pour into a 1 1/2 qt
    casserole. Bake for 1 to 1 1/2 hours, stirring occasionally, until
    rice is tender. Makes 4 cups.

    I actually used brown rice for mine.  I had to add about 1/2 cup more rice milk and bake for an extra 45 minutes.   This is awesome for breakfast, since it has a consistency similar to oatmeal.

     i have an amazing recipe for black bean soup. when i have time to type it up, i will be more than glad to post it. i do have two really good recipe books though. Main-Course Vegetarian Pleasures by Jeanne Lemlin, and 125 best vegan recipes by maxine effenson chuck and beth gurney. they have delicious dishes.

     recipe:
    1 box spiral pasta
    half red onion
    vegetarian ground meat
    jar tomato sauce
    block soy cheese (mozzarella)
    garlic powder
    sugar

    ground red pepper
    salt
    oregano

    cook pasta, not completely cause it will cook in the sauce a little later.
    chop onion and cook until softened. add faux ground meat and brown.
    grate cheese and set aside.
    add tablespoon sugar, tablespoon garlic powder, tablespoon oregano,
    teaspoon salt, and teaspoon pepper to jar of sauce, little bit of water,
    re-seal jar and shake.
    spray oven safe casserole pan with oil. then add a small about of sauce
    add noodles, onions and "meat" mix with rest of sauce, then sprinkle all
    of the soy cheese on top, bake at 430 degrees for 18-20 minutes checking occasionally.
    garnish with basil
    bread and margarine are a nice side


    Tofu Stir fry:
    1 package of extra firm tofu
    soy sauce
    scallions
    vegetable broth
    box of couscous

    press water out of the tofu and cube. brown chopped scallions in oil in a medium pan. add tofu and a little bit of vegetable broth reduce down and cook tofu until firm and slightly brown. add enough soy sauce to coat the bottom of the pan and cook until the soy sauce is warm(a minute or two). pour over cooked couscous and enjoy
    add chopped up vegetables if you want. its quick easy and delicious. some parmesan cheese on top is good too.

     Tofu-Stir fry :)

    1 package extra firm Tofu

    1 package stir fry vegetables, I prefer broccoli, carrots, and snap peas

    About a cup or so of bean sprouts

    Onion (as much as you like, I'm an onion person so I use about 3/4's of the onion)

    (I'm not the best with measurements, I hardly ever measure things -_-) About a cup or two of flour, and a half of cup of yeast.

    Vegan butter or margarine; Vegetable oil or olive oil will do too

    Stir Fry sauce (I used General Tso's sauce, it tasted great!)

     

    -Mix together flour and yeast in a good sized bowl and have a skillet on the stove ready with olive or vegetable oil. 

    -Dice tofu into cubes; coat tofu in flour and yeast.

    -Fry with olive oil or vegetable oil

    -Place butter in large skillet; fire on high. Let the butter melt

    -Place vegetables in skillet with butter and saute. 

    -Fry tofu in golden brown

    -Saute vegetables until desired.

    -Place tofu in skillet with vegetables and add stir fry sauce.

    -Add a little water to mixture and place lid over pan and cook on a low heat

    -Serve with rice or not; ENJOY :)

     

    I'm horrible at directions, obviously. If anything is unclear please do ask! :D

    im a big fan of any thing sarah kramer does. she has some amazing cookbooks out there. "how it all vegan" and "la dolce vegan" are both super.

    as far as made up recipes... either buy a wok and one of every veggie you can find, or throw a soup party and tell everyone to bring a veggie. nothing like community and warm food.

    I love the idea of a soup party.  How do you make them all into soup?  I'm a noob to making soup and wouldn't even know where to start with flavorings or broths.  That sounds like it would be good with chilli too!

    soups are really easy.

    simer onions peppers carrots or other hard vegetables in some oil to soften them up (cliche here is "until onions are translucent"). add water and everything else you can find. cover for an hour or more until you get too hungry, then devour away

    as far as the broth goes confidence builders are sold in little yellow boxes rochester pa's giant eagle. im sure they sell bullion cubes elsewhere however. they usually print instructions on the box. you can also simply boil veggies salt and other good smelling spices ie cumin, chilli powder ... and strain to make a freezable broth.

     i will say this as well, its really hard to make a bad bowl of soup, but the only way youll make amazing soups is either lots of experiments, or enjoy them with amazing people. remember the more people the more variety in veggies.
